Today, we mainly had leftover arroz con pollo from yesterday, but we needed some vegetables too. Thus, cauliflower salad from Simple Foods.

Arroz con pollo con pollo
It's been a long time. Ladypants has been working nights, so there hasn't been much cooking. However, she has switched back to days. It called for a celebration, so I cooked arroz con pollo. It was delicious and fun.

Pizza Night
The best part about having a stand mixer is how easy it is to throw together some pizza dough together the night before, let it rise in the fridge, and have homemade pizza that night. This dough is made with whole wheat and the pizza has sausage, fennel, mushrooms and artichoke hearts.

Dinner for Two
It was supposed to be a special dinner for two. That didn't work for me, but at least tithe food was good. The salad had seared tuna, blanched green beans, edamame, homemade croutons and a garlic red wine vinaigrette. For desert there were brownie cupcakes. They were made from scratch and had little bite-size pieces of chocolate mixed into the batter so that it would be melted when it was bitten into hot. This morning, I was adviced that they good at room temperature too.

Wheat Pasta
I have a cold, and it is far too cold outside for me to go shopping. When that happens, homemade pasta is easy. Flour, eggs, tomatoes and a little wine, and I am on my way.

Poached Egg and Toast
This has nothing to do with cooking for anyone other than me. If the lady had been awake, she would have turned her nose up at this breakfast. However, there is just something wonderful about a perfectly poached egg, a slice of toast and a cup of tea.

Rose Shortbread Cookies
Generally, I find the addition of a little bit of rosewater or orange-blossom water adds a nice complexity to baked goods. In fact, it is a neat little trick. However, this recipe is not about adding subtle complexity to a recipe, this recipe is about putting rosewater at the forefront. It took a long time to develop, but the result is a vanilla cookie with great texture that you want to smell as much as you want to eat. This particular batch is headed to Grandma Kate's cookie exchange tomorrow.
